Healthy Dinner – Chicken pasta with mushrooms, onion and greenpepper

Right, so last night I had salad for supper and I have to be honest, it was soooo unfulfilling. This evening I’ve done a little more exploring and decided to go for something a bit more filling and tasty, Chicken Pasta with Green Peppers, Mushroom and Onions.

Here’s how I’m going to go about it.

I’ll buy some chicken breasts and season them with some chicken spice before placing them into the oven. Whilst the chicken is underway, I’ll saute some mushrooms, onions and green peppers (ie. pan fry, tiny bit of oil). Remember, the green peppers should still have a little crunch left to them. Once the veggies are done, you’ve got 3 choices:

1. Pour +-250ml cream over them (least healthy)
2. Pour Bulgarian yoghurt over them (healthier)
3. No sauce (healthiest)

By this stage, the chicken will hopefully be done, well, lol, I actually don’t know, but that’s how it’s going to work tonight ;) Pour your veggies onto the pasta, mix up and serve.

I think it’ll go perfectly with a lovely glass of chenin blanc with a few blocks of ice :)

The meal was delicious and definitely one I will have again. I decided to skip the chicken as I was too lazy to defrost it ;) Next time I will add some red pepper or mini tomato’s to bring out some more colour in the dish, but for my first attempt, with a very undefined recipe, I’m chuffed.

    Hehe, ye mate, it was alright hey, I’m so used to fatty, greasy food that normally tastes amazing, so slowly but surely I’ll adjust :)

    @Chris – Nando’s aside, I’m lucky not to have the lust and taste for fatty fast foods. I’m sure after time, you’ll be like “Mmmmmm, broccoli, yeah!”…. Okay maybe not that extreme

    I go through phases really, I know that if I keep this up for about 2wks, then my whole craving changes and I no longer want junk food, so I guess I’m fortunate in that regards, it’s just the 2wks :P

    I love broccoli though! haha
